Greenwood Village awarded a liquor license to the operators of Eddie V’s Restaurant April 1 to make it official. The high-end steak and seafood restaurant is building its 9,000-square-foot first Colorado location at 5111 DTC Parkway in Greenwood Village, just south of FirstBank in what has been an empty lot.
Eddie V’s is part of the Darden Restaurant group and has 24 other locations around the country in 11 states, including seven in Texas and four in California. Their dinner menu features oysters, caviar and many other seafoods, along with a variety of steaks. Darden is also the owner of the high-end Capital Grille chain, which has a busy location on Larimer Street in Denver. They also own other restaurant chains including Longhorn Steakhouse and Olive Garden.
Eddie V’s operators told GV officials they expect to employ 80 people and have targeted January 2020 as their opening date.
